Avarekalu sambar recipe (flat beans) is a very popular ingredient in South India. You can add them in almost all the dishes of Karnataka like upma, pulao, saagu/kurma, averakalu curry, gojju, and of course in sambar. Grown in abundance during the winter season in Karnataka, avarekalu recipe is a household preparation here. It strengthens your body and acts like an antiseptic. Follow these simple steps to prepare the wonderful Avarekalu Sambar recipe.


  • 500 gm shelled avarekalu
  • 2 tablespoon sambar powder
  • 1 teaspoon tamarind extract
  • 1 tablespoon jaggery
  • 1 tomato
  • 3 tablespoon coconut
  • 1 tablespoon chilli powder
  • 1 tablespoon oil or ghee
  • Salt to taste
  • 4 Water
  • 1 teaspoon mustard seeds
  • 8 curry leaves
  • 2 pinches of asafoetida


  • Boil the avarekalu and 1 litre water with chopped tomato and a little salt
  • Grind the coconut and keep aside
  • Heat ghee in a kadai
  • Add mustard seeds, curry leaves, and asafoetida in it
  • When it splutters add the coconut and cook it for 3-4 minutes and pour it on the boiled avarekalu
  • Add the water sambar powder, salt, chilli powder and bring it to boil
  • Now add jaggery, tamarind water and adjust the seasoning
  • Avarekalu sambar is ready
