Dhokla recipe is from Gujarat. Main ingredients rice and besan, It is light food for age group and good for health. This versatile and instant dhokla recipe is purely vegetarian.


  • 2 cup gram flour (besan)
  • 1 cup beaten yogurt
  • Salt to taste
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon green chilli-ginger paste
  • 2 tablespoons oil
  • 1 tablespoon lemon juice
  • 1 teaspoon baking powder
  • 1 teaspoon mustard seeds
  • 2 tablespoons chopped coriander leaves
  • 0.5 cup scraped coconut


  • Take gram flour in a bowl
  • Add yogurt and one cup of warm water and mix by avoiding lumps
  • Add salt and mix again
  • Leave it for fermentation for three to four hours
  • Once the mixture gets fermented, add turmeric powder and green chilli-ginger paste
  • Heat the steamer
  • Grease a thali/dish
  • In a small bowl take lemon juice, cooking soda, a little oil and mix it
  • Add this mixture to the batter and keep whisking
  • Pour the batter into the greased thali and put it in a steamer
  • Cover with the lid and let it steam for ten minutes
  • When a little cool, cut into squares and keep in a serving bowl/plate
  • Heat the remaining oil and temper mustard seeds
  • Once the seeds crackle, pour over the dhoklas
  • Serve, garnished with chopped coriander leaves and scraped coconut
