DESCRIPTION:

Comfort food, a quick recipe, a flavoursome rice dish, we give you the healthy and hearty veg pulao. Rice is the staple food of most of the country and veg pulao is a common rice dish that not just the entire country but even the world loves. Different parts of the country have its own version of veg pulao. My recipe is the most common way of preparing it which can be cooked easily and in less time. It is a recipe that can be cooked in a kadai or cooker and today I will share with you how to prepare veg pulao in a pressure cooker. It is a very simple rice dish with the goodness of vegetables that will be healthy for you. They say its origin is Dravidian, loved by Persians to Greeks. This delightful recipe can be cooked with your choice of vegetables but you should not pick soggy vegetables.

INGREDIENTS:

  • 400 gm/2 cup basmati rice
  • 50 gm peas
  • 30 gm chopped French beans
  • 50 gm cubed carrots
  • 50 gm diced potatoes
  • 50 gm florets of cauliflower
  • 50 gm chopped capsicum, chopped into cubes
  • 30 gm chopped tomatoes
  • 1 medium sized sliced onion
  • 4 cups water
  • 1 tablespoon oil or ghee
  • Roasted cashew nuts
  • A few strands of coriander/mint leaves
  • 0.5 inch chopped ginger
  • 4 smashed garlic
  • 1 teaspoon ginger-garlic paste
  • 3 slit green chilies
  • 1 cinnamon stick
  • 3 cardamoms
  • 3 cloves
  • 1 bay leaf (tej patta)
  • 1 teaspoon cumin seeds
  • Pinch of turmeric powder
  • 1 lemon juice

INSTRUCTIONS:

  • Wash the rice and keep it aside
  • Roast the cashew nuts and deep fry half of the onion slices and keep aside
  • Heat the ghee/oil in the pressure cooker and add cumin seeds to it
  • Add the remaining onion slices, smashed garlic and fry on a low flame
  • Now start adding the whole spices, turmeric powder and saute till it become fragrant
  • Once that is done add the ginger-garlic paste, green chillies and fry further
  • At this point add the all the chopped vegetables and saute for 2 to 3 minutes on a low flame
  • Now add the rice and saute gently for a few minutes which will make the rice non-sticky
  • Add salt as per taste,lemon juice and stir pulao
  • Cover the lid of the pressure cooker and bring to 2-3 whistles
  • Once the pressure is settled by its own, remove the lid
  • Garnish the pulao with fried onions, cashew nuts, mint/coriander leaves
