Sabudana vada, known as sabbakki in Kannada is one of the favorite snacks of Maharashtra. Sabudana is an ingredient that is used expansively during religious fasting. Various preparations like khichdi, bhel, and pakoda are made out of sabbakki. Desserts like sabudana kheer and sabudana laddo are quiet popular not only in Maharashtra but in the entire country. Sabudana vada is mostly eaten in the morning or evening as snacks. This delightful sabudana vada recipe is crispy in the outside with soft and chewy core. Let me help you to prepare this simple recipe which you can cook with just a few steps.


  • 1 cup sabudana/sabbakki
  • 2 boiled, peeled, and mashed potatoes
  • 2 chopped green chillies
  • A strand of chopped coriander leaves
  • 2 teaspoon red chilli powder
  • 1 teaspoon ginger paste
  • 1/2 cup roasted peanut powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • Oil to fry


  • Soak the sabudana/sabbakki for 2-3 hrs or overnight
  • Drain the water
  • Mix all the other ingredients and give shapes to the vadas by gentle press between palms
  • Heat the oil in kadai
  • Deep fry the vadas till they become golden brown
  • Serve hot with pudina chutney or any of your favorite sauce/chutney
