INGREDIENTS:

  • 4-5 small sized karela
  • 1 tsp salt, for marination
  • for stuffing:
  • 2 tsp oil,
  • 1 small onion, finely chopped,
  • 1 tsp ginger-garlic paste,
  • ½ tsp turmeric ,
  • 1½ tsp coriander powde,
  • ½ tsp jeera powder
  • 1 tsp red chili powder
  • salt to taste
  • 1 tsp aamchur
  • ½ tsp garam masala powder
  • 1 tsp sugar (optional)
  • 3 tbsp oil
  • thread, to tie

INSTRUCTIONS:

  • Scrape the bitter karelas. Keep the scrapings. Slit the karelas. Remove the seeds and discard them. Apply salt and leave it for 1/2 hour. Wash them thoroughly.
  • Heat oil in a pan. Add chopped onions and cook for 2-3 minutes. Add ginger garlic paste and half of the scrapings. Cook for 2-3 minutes. Add turmeric powder, coriander powder and amchur and sugar. Cook for another 8-10 min. Stuff the karelas with this stuffing and tie with thread.
  • fry the stuffed karela in 3-4 tbsp oil on low flame. Fry the karela from both sides. cover and simmer for 10 minutes stirring occasionally.add leftover stuffing masala and mix gently.cover and simmer further for 1-2 minutes.
  • bharwa karela or stuffed karela is ready to serve with rice or chapathi.
