The HOLI festival is here and so the list of delicious sweet recipes. It is time to get preparing our age-old traditional sweets and distributing among friends and family. Karanji is a favourite sweet of the Maharashtrians and they prepare it in almost every celebration. The ingredients of Karanji recipe are few and I would say it is not one of the easiest recipes but not that difficult also. It is similar to gujiya by the way it looks and tastes. Karanjis are basically fried pastries with a sweet filling that usually consists of sugar, coconut, and dried fruits. The outer cover is fried to be crisp and crumbly filling inside.

  • gm plain flour (maida)
  • tablespoon ghee
  • Ingredients for the filling:
  • gm dry coconut flakes
  • gm sugar
  • tablespoon roasted poppy seeds
  • teaspoon cardamom powder
  • tablespoon chopped almond
  • tablespoon chopped nuts
  • to 15 raisins

  • Mix flour and ghee well
  • Add a little and knead it well to get soft dough and keep aside for 45 minutes
  • Meanwhile roast coconut flakes lightly and let it cool down
  • Lightly roast poppy seeds and keep aside
  • Now mix the roasted coconut flakes with poppy seeds and add all the chopped dried fruits and sugar to it
  • Now take small portions of the resting dough and roll out to get 3-4 inches rounds (not too thin not too thick)
  • Place 2 teaspoon filling in one half of round and fold over the other half
  • Now close the edge by pressing and twisting it
  • Make the remaining karanji by following the same steps
  • Keep it dry and fry in hot ghee on low heat
  • Fry till both the sides becomes light brown
  • Drain the ghee and let it cool down completely before serving or storing
