DESCRIPTION:

Khati meethi gol kachori

INGREDIENTS:

  • For outer layer
  • 1 cup all purpose flour,
  • 3 tablespoon warm oil,
  • Salt to tast,
  • Water as needed .
  • For stuffing
  • 1/2 cup roasted gram flour,
  • 3 tablespoon oil,
  • 1/4 cup tamarind pulp,
  • 1/2 cup sugar or jaggery,
  • 1/2 cup water,
  • 1/2 teaspoon clove powder,
  • 1/2 teaspoon  cinnamon powder,
  • 1/2 teaspoon asafetida,
  • 1 tablespoon garam masala,
  • 1 tablespoon red chilli powder,
  • 1 tablespoon coriander cumin powder,
  • 1 tablespoon sesame seeds,
  • 1 tablespoon coriander seeds,
  • 1 tablespoon fennel seeds,
  • Salt to taste,
  • 1/8 cup raisins,
  • 1/4 cup cashew nuts chopped,
  • Oil for deep frying. 

INSTRUCTIONS:

  • In bowl add salt, all-purpose flour and warm oil and mix well.Add water as needed and knead smooth dough. Cover the dough and leave for 10-15 minutes.
  • Roast the gram flour until lightly pink.
  • In bowl mix jaggery, tamarind and water.
  • Heat 2 tablespoon oil in pan, add asafetida and tamarind mixture.Cook for 2 minutes now add all spices and mix well.Now add gram flour mix well.Than add raisins and cashew and sauté this mixture until dry and look like dough.Turn off the flame, 
  • After cool this stuffing make small size balls.
  • Divide the dough in same equal portion.roll each ball into thick puri.Put the stuffing ball in middle, wrap stuffing with puri Seal the edges and give it a shape of ball.
  • Heat oil in a kadhai. Deep fry kachori in medium to low flame until they turn light brown.
  • Store in airtight container This dry kachoris store about 15-20 day in room temperature.
  • serve with tea or coffee
