DESCRIPTION:

Egg Masala Curry where boiled eggs are just simmered in spicy masala gravy. It has a nice tangy taste of tomatoes coupled with the flavors and taste of the spices that are used.

INGREDIENTS:

  • 4 Eggs For Curry
  • 1 tsp Cumin Seeds
  • 1 Green Chilli
  • 1 Onion, finely chopped
  • 1 tsp Ginger, chopped
  • 1 tsp Garlic, chopped
  • 1 tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Salt
  • 1/2 Cup Water
  • 2 Tomatoes
  • 1/2 Cup Water
  • 3 Tbsp Coriander Leaves

INSTRUCTIONS:

  • Take a pan and add cumin seeds, green chilli and chopped onion
  • Saute them till golden brown and then add ginger, garlic, turmeric powder, coriander powder, cumin powder, red chilli powder and salt.
  • Mix them well.
  • Add water and let it simmer.
  • Now add grinded tomatoes, mix well and add more water. Mix them thoroughly.
  • Add yogurt(optional), cut eggs in half and put the eggs into the gravy and mix.
  • Now add coriander leaves and mix. Bring to simmer.
