DESCRIPTION:

Mixed vegetable curry is eaten across the country in every season as the main course. Originated in the Indian sub-continent, curry is a spicy mix of dry or gravy dish. It is not a time consuming recipe and can be eaten with any rice recipe and Indian breads. You can pick your favourite vegetables and slow cook them with the listing of crushed, whole, and raw spices and aromatics. The idea of curry is as old as Indus Valley civilization that continues to make our taste buds happy. A hot bowl of mixed vegetable curry is hearty and nutritious at the same time. All you need are the arrangement of spices and fresh vegetables and you easily prepare this popular recipe.

INGREDIENTS:

  • 2 carrots
  • 100 gm peas
  • 100 gm cauliflower
  • 7-8 French beans
  • 4-5 Ladies finger
  • 1 potato
  • 1 onion
  • 2 small tomatoes
  • 2-3 green chillies
  • 3 tablespoons oil
  • 1/2 teaspoon cumin seeds
  • 2 teaspoons ginger-garlic paste
  • A pinch of turmeric powder
  • 1 teaspoon chilli powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 500 ml water

INSTRUCTIONS:

  • Wash the vegetables nicely and them cut accordingly and keep aside
  • Fry the ladies finger and keep aside
  • Heat up oil in a pan and put in the cumin for tempering
  • Now add the sliced onion, green chillies, ginger-garlic paste and fry for a few minutes
  • Meanwhile make a thick paste by adding turmeric powder, other spice powders, salt and a little water
  • Now add this spice paste to the tempering and fry again till the oil separates
  • Add the tomatoes pieces now and cook till it gets soft
  • Now add the remaining vegetables, along with fried ladies finger and mix well with the masala
  • Let it cook for 15 minutes (keep adding a little water if it gets very dry)
  • Now pour half cup of water and simmer for 3-4 minutes
  • Turn off the stove and serve the curry hot with rice or chapatti
  • Tips: • You can use any of your favourite vegetables for this recipe • You can garnish with coriander leaves and cream • If you want gravy in the curry, add 1 cup water instead of half cup • Scraped coconut or coconut milk can be used for gravy • Enjoy various other veg curries recipe of India in our blog.
