This gorgeous pineapple upside down cake recipe exists from the Middle Ages and so is the technique of preparing this cake. Pineapple cake is South-East Asian’s favorite. Its fragrance, juicy and chewy texture, and sweet jelly like filling will make you crave for more. This pineapple cake is baked in a single pan with cherries, pineapple, butter and sugar topping which are placed at the bottom. It is a single layer bright yellow colour butter cake that looks pretty as a picture and very simple to prepare. The ingredients that are used to prepare this cake are readily available in the market which makes it a no-fuss recipe. Follow the instructions correctly and I am sure the result will be pleasing.


  • 100 grams plain flour
  • 6 slices of pineapple
  • Butter (for greasing)
  • 2 tablespoons sugar
  • 2-3 tablespoon pineapple juice
  • Glace cherries
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 100 gm butter
  • 100 gm caster sugar
  • 2 eggs


  • Preheat the oven to 200°C
  • Cut the pineapple in round slices
  • Prepare sugar and butter syrup by putting 2 tablespoons of sugar and 2 tablespoon butter in pan and caramelise it
  • Pour this syrup on a cake tin (24 cm/9 inches wide) and make a layer
  • Now arrange the pineapple slices on this layer and fill every pineapple ring with cherry glace and put a cherry in each centre of the slices
  • In a bowl put the flour, baking powder, soda, butter, caster sugar and eggs and mix well (you can also use a food processor to get a smooth batter)
  • Then pour the pineapple juice in the flour mix
  • Now pour this mixture slowly over the pineapple rings and spread it out gently with a spatula
  • Bake for 30 minutes
  • After taking the cake out of the oven cool it completely and gently run the spatula around the edge of the tin
  • The final step is to place a plate on top of the cake and carefully turn it upside-down
  • Now you can slice the cake and serve
