DESCRIPTION:

Mumbai’s street food has come a long way to become the favourite Indian style burger. You can find it almost across the country. Everyone loves it and comes back to their popular eating joints and stalls all the time. Try this recipe at your home and I am sure you will love it.

INGREDIENTS:

  • 4 pav
  • 3 potatoes
  • 6 green chillies
  • 5-6 cloves of garlic
  • 1 tablespoon of chopped coriander leaves
  • 5-6 chopped curry leaves
  • 1 lemon
  • A pinch of turmeric powder
  • A pinch of asafoetida
  • Salt to taste
  • For batter : 1 cup gram flour
  • A pinch of turmeric powder
  • 1/2 red chilli powder
  • A pinch of cooking soda
  • Oil to deep fry
  • Salt to taste
  • For the chutney: 1 cup coriander leaves
  • 2 cloves of garlic
  • 1/2 lemon juice
  • 3 green chillies
  • Salt as required

INSTRUCTIONS:

  • Boil the potatoes, peel the skin and mash to get a smooth paste
  • Now heat 2 tablespoon oil in a frying pan and add the chopped curry leaves, asafoetida, paste of 2 green chillies, add turmeric powder
  • Fry all these spices for a few minutes
  • Add these fried spices to the mashed potatoes and add chopped coriander leaves and salt
  • Mix all the ingredients well and make small balls of the potato and keep aside
  • Now start to prepare the batter from besan/gram flour, turmeric powder, asafoetida, baking soda (optional), salt and water to get a smooth bonda batter
  • Heat oil in a kadai, meanwhile coat the potato balls in the batter evenly and dip in the oil to deep fry in the medium hot oil
  • Fry till the golden brown colour appears.Deep fry the remaining 4 green chillies in the same kadai
  • Serve it hot with already prepared chutney and fried green chilly
  • For serving slit the pav slightly, spread the chutney on the inner sides, place the vada in between and serve with the deep fried green chilli
