  • Salt to taste
  • Water to knead

  • 1 teaspoon garam masala
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon coriander powder (dhania)
  • 1/2 teaspoon crushed coriander seeds
  • 1/2 teaspoon crushed fennel seeds (saunf)
  • 1/2 teaspoon cumin seeds
  • 1 tablespoon coriander leaves finely chopped
  • Salt to taste
  • 1/2 teaspoon asafoetida
  • 1 tbsp. oil
  • 3 cups oil to deep fry the kachoris

  • Mix flour, salt and oil to knead soft dough and keep it aside for 30 minutes
  • Meanwhile boil the soaked dal, then drain the water and let it cool down
  • Now heat oil in a heavy bottomed pan and add cumin seeds, fennel seeds, and coriander seeds
  • Add asafoetida to it once the aroma gets released
  • Now add the dal and mix it well
  • Remove the mixture from the heat and let it cool
  • Take the dough and divide into 12-15 portions according to your choice
  • Grease them with a little oil, roll them in between your palms and keep aside
  • With a rolling pin roll out the dough into 4 inches diameter
  • Place 2 teaspoon of the filling at centre and make a parcel
  • Roll once again very carefully so as to not to break the cover
  • Now deep fry the kochori till it gets golden and crispy
  • Follow the same steps to prepare the remaining kachori
  • Drain the excess oil and serve it hot with green and tamarind chutneys
  • Tips: • You can also use green peas stuffing instead of moong dal • Take time to fry the kachoris one by one otherwise it will turn oily
